Simple Supper: Baked Salmon, Kale, and Quinoa
I love EASY, and a simple baked salmon is one of the easiest and fastest ways to have a healthy and elegant dinner in under 30 minutes.
For this weeknight dinner, I baked salmon in a lemon garlic butter sauce at 425 degrees in the oven for about 8 minutes. I served it with sauteed garlicky kale from my CSA (there's no such thing as too much garlic) and over a bed of fluffy quinoa (a staple in my pantry).
I'd provide a recipe, but there's really no need for instructions. And in fact, you don't have to be so fancy with the lemon garlic butter sauce. Rubbing just a little olive oil on the salmon and sprinkling it with salt and pepper is enough to give it a great flavor.
Easy is good.
